Garlic Scape Pesto
We know that pesto is delicious on pasta. And garlic goes great with pasta. But have you tried garlic scape pesto on pasta!!!! You can’t really consider yourself a CSA member until you’ve made garlic scape pesto.
You think avocado toast is great, but have you tried garlic scape pesto on toast? It also goes well on pizza, eggs, and more!
Ingredients:
-1 cup garlic scapes (about 10-12 scapes)
-1/4 cup olive oil (to start, add 1/4 more if you prefer smooth vs chunky)
-1/4 tsp salt (or more to taste)
Optional:
-¼ cup pine nuts or sunflower seeds
-¼ cup parmesan cheese
-splash of lemon juice
Preparation:
Step 1
Chop off scape “flowers” (the funky looking end) and loosely chop scapes
Step 2
Place in food processor and pulse for 30 seconds
Step 3
Add nuts or seeds and/or cheese, pulse for another 30 seconds (optional)
Step 4
Add olive oil, lemon juice, and salt, process on high until smooth
Step 5
Taste, make any modifications if necessary, and ENJOY!
Makes about 6-8 oz
