Have you ever wanted to make everything taste like an everything bagel??? Turns out it’s ridiculously easy. Stop by your local natural foods store with a well-stocked bulk section, and stock up on sesame seeds, poppy seeds, granulated garlic, and minced or flaked onion. I love our new pick-up site Greenstar Co-op’s bulk section. I made a big batch of this spice mix for next to nothing. We used this mix first to amp up a batch of Kale Chips, and now I’ve got a bunch of ideas going through my head for the main season, like with kale salad or any salad, added to the top of any gratin, sprinkled into panzanella, over any roasted vegetable especially squash, sprinkled onto soups like puréed carrot, added to farro salad, and sprinkled over fritters & latkes of all varieties. Actually the more I think about this, the wackier it gets – everything bagel risotto, frittata, pasture raised pork chops, maybe sprinkled over refrigerator pickles or added to spices for cured beets. Check back this summer for more ideas! This should be a mixture that almost anyone can enjoy – vegan, paleo, etc. When using everything bagel spice mix, just keep in mind it’s salty – so you may reduce the rest of the salt in your recipe to compensate. Other than that, the sky’s the limit (or is it?).
Everything Bagel Spice Mix
2 tablespoons sesame seeds, toasted
2 tablespoons poppy seeds
1 tablespoon dried minced or flaked onion
2 tablespoons dried granulated or minced garlic
1 teaspoon kosher salt
Combine ingredients in a bowl. Mix thoroughly, then store in a jar with a tight-fitting lid for up to 3 months.
