
Super Simple Salad
During the early part of the summer season, we are all about the super simple salads at my house. Quick, easy, healthy, and delicious!
Ingredients:
-spring mix
-shredded carrot
-chopped garlic scapes (or sub any salad topping, such as radish or cucumber)
-feta cheese
-steamed edamame
-roasted pumpkin seeds
-red wine vinaigrette
Preparation:
Step 1
Steam frozen edamame in a small pot for about 3-5 minutes, until tender
Step 2
Place spring mix on plates
Step 3
Shred carrot and put on top of lettuce
Step 4
Cut off “funky ends” of garlic scapes and finely chop. Place on top of carrots.
Step 5
Top salad with edamame, feta, and pumpkin seeds
Step 6
Combine 3 oz of red wine vinegar with 1 oz of olive oil in a jar. Add a dash of salt and pepper, garlic powder, and a splash of lemon juice. Stir and pour on salad.
