Easy Beet Chips

Do you have an oven and a bag of beets? Well, beet chips are just about 30 minutes away! I have to say in all my years as a CSA member beet chips have always been in the back of my head, but this is the first time I ever made them. These taste exactly like the ones in the bag, use a fraction of the oil, and my 4 year old happily crunched on them all the way home from school. I used a few key tools in the kitchen (food processor with slicing blade, wire rack, parchment paper) that made this really easy.

Our Kitchenaid food processor has become a work horse in the farm kitchen! (Have you read our review?) The slicing blade is adjustable making paper thin slices a breeze! If you have a mandolin in your kitchen, that’s also a good option for paper thin slices. I have a small kitchen at home, so the adjustable slicing blade on this food processor takes mandolin right off my list. Peel the beets and chop into pieces that will fit through the feed tube of your food processor (if necessary). If you want perfect circle beet chips use small beets. These were fairly large so I halved them to fit into the feed tube.

If you’re using a food processor the beets will slice up really fast! If using a mandolin or a sharp knife, take your time. Thinner is better for crispier chips. Gently toss the beet slices with the olive oil and salt. If you want to get fancy add some minced rosemary or thyme. Carefully lay the beet slices onto a parchment lined baking pan.

Bake the chips at 350°F for about 20 minutes watching carefully! The beet chips are done when they’ve totally changed color and are crispy all the way through. I found that beets that were still red were soft in the middle. I found myself adding 5 minutes to the timer and checking often until they were totally done. Cool on a wire rack to allow them to crisp up. Beet Chips are best eaten soon after they come out of the oven.

Easy Beet Chips
1lb beets
1 tablespoon olive oil
1/2 teaspoon salt

Recommended Equipment:
Food Processor with slicing blade
Parchment Paper
Baking Pan
Wire Rack

Preheat oven to 350°F

Peel and scrub beets. Remove tops and bottoms. Using a food processor slicing blade or mandolin, slice beets 1/8 inch thick. Place beets in a large bowl and toss with olive oil and salt.

Line 2 baking pans (or more if your oven has more racks, you may have to bake in batches) Bake beets for 20 – 30 minutes, checking after 20 and then every 5 minutes or so until completely cooked and crispy. Immediately transfer to wire racks to cool.
