Balsamic Vinaigrette

Homemade salad dressing is ridiculously easy to make, and can store in your refrigerator for a few days. Mix up a batch of dressing, pre-wash some greens, and you’ll have easy salads for a few nights. A great way to use up the salad in your CSA share! This easy balsamic dressing is our go to salad dressing for CSA salads. Combine your favorite olive oil and balsamic vinegar with dijon mustard, garlic, and a little salt & pepper. Fresh or dried thyme is a great addition if you have it.

Balsamic Dressing

Just mix the ingredients together in a jar with a lid, and toss with greens. For a great fall salad add apples, shaved carrot, onion, crumbled blue cheese, and pumpkin seeds. Roasted root vegetables or squash also make great salad toppings in the fall. A protein like chicken, egg, tofu, or salmon will turn this into an easy meal.

Balsamic Dressing

Balsamic Dressing makes enough for 2 large salads

1/2 cup olive oiil
1/4 cup balsamic vinegar
1/2 teaspoon dijon mustard
1/4 teaspoon sea salt
3 – 4 grinds fresh black pepper
1 tablespoon lemon juice
1 garlic clove, minced
optional: 1 teaspoon fresh thyme or 1/2 teaspoon dried
