I know what you’re thinking – and no, we didn’t sneak vegetables into the cranberry sauce! Although maybe you could sprinkle some shredded beets in and no one would notice, but NO that’s not what we’re trying to do here! We made this simple, delicious cranberry cranberry sauce for our farm xmas party last year and everyone loved it! Fresh sweet and sour cranberry sauce is the perfect side to add a little lightness to a heavy meal and I had to share this version made with local ingredients from the CSA+ at Good Life Farm!
In fact, these cranberries were brought last year by a friend of the Good Lifers – if you see fresh cranberries be sure to snatch them up! These were gorgeous and I was thrilled to find them in the back of the freezer. A few big slices of ginger add great flavor to the sauce. Fresh cranberries are hollow, and they’ll pop as you cook them, for the best flavor make sure they all pop before you take the sauce off the stove. Serve warm or cold.
Fresh Maple Ginger Cranberry Sauce
1 lb fresh cranberries, washed, stems removed
1 cup maple syrup
1 cup water
2 big slices ginger
zest from 1 lemon
Place the cranberries, maple syrup, lemon zest, and water in a medium sauce pan. Bring to a boil. Reduce to a simmer; cook until cranberries are soft, about 10 – 15 minutes.
