Here’s a fresh crunchy salad that’s easy to put together and can be doubled depending on the size and quantity of the cucumbers in your CSA Share. Our seedless diva cucumbers are perfect for salads like this, you don’t need to seed them at all. I like to peel the cucumbers, but leave a few strips of the green peel for color. If you like cucumber peels you can also leave the peels on.
The only other ingredients are crushed peanuts, rice vinegar, lime, and oil. I like to pair this salad with our Miso Glazed Eggplant and short grain brown rice. It would also be great with grilled fish or shrimp, chicken, or Asian noodle dishes. Once the cucumbers are washed and peeled toss with the dressing ingredients and add the nuts. If you like spicy (we do), add a pinch of crushed red pepper. If making ahead, add the peanuts just before serving.
Cucumber Peanut Salad
2 cups thinly sliced and peeled cucumbers
1 tablespoon canola oil
1 teaspoon toasted sesame oil
1 tablespoon lime juice
1 tablespoon rice vinegar
1/2 toasted, unsalted peanuts, crushed or chopped
pinch of red pepper, optional
sea salt if necessary
Combine cucumbers and liquid ingredients. Add crushed red pepper, and peanuts. Taste and adjust salt if necessary.
