It’s that time of year! Whether you’re skipping the sugary treats or indulging a healthy dinner is the way to go before hitting the neighborhood with your ghouls and goblins. Growing up my Mom always kept a big pot of chili on the stove, we’d stop by and fuel up on our way through the neighborhood for more treats! Here’s our favorite bright and fun recipes for a happy and healthy Halloween!
Soups and Stews. Go orange with Carrot Miso Soup or Best Easy Squash Soup – served in a squash bowl! Of course there’s chili – beef or quinoa based. Although not technically a soup or stew our bright orange Carrot & Parsnip Shepherd’s Pie is also a fun, festive treat. Try the vegetarian version too!
Smoothies & Juice. Mix up a batch of our Green Smoothies and call it Goblin Juice! Or “Bloody” Beet Smoothies! Have a juicer? How about green apple celery goblin juice? Or blood beet juice! Carrot orange would be perfect for your little pumpkins!
Vegetable Chips. Make some crispy vegetable chips and keep a bowl out for snacking as your trick or treaters come in and out. You’ll be surprised how fast these will get snatched right up! All you need is an oven, parchment paper, and a mandoline or food processor with a slicing blade. Try our recipes for beet chips and kale chips, or make a batch of heartier Winter Squash Chips with Rosemary Aioli for a filling snack!
Hummus. How about a veggie platter and nourishing vegetable hummus to snack on before you head out for the festivities? These are easy to make in advance, and kids can dip chopped up veggies, crackers, pita, or pretzels (I saw some great Halloween shaped pretzels for a non-sugary snack!). So far we have recipes for Parsnip Hummus, Pink Hummus with Pickled Beets, & Emma Frisch’s Rutabaga Hummus. If you don’t have time to make hummus, add some shredded veggies to your favorite store-bought option.
