I’ll be the first to admit, we do some pretty wacky things with beets around here. But, the funniest things sometimes turn out the best and this smoothie is proof! (and so is the cake, the ice cream, and the brownies) It’s the first week before school starts so I had my 4 year old assistant and taste tester with me today. His verdict? “I love it! Let’s make these at home!”
I used raw shredded beets here and a non-fancy blender and the consistency was perfect I think the pineapple really balances out the beet and brings out it’s naturally sweet flavor. My go-to for smoothies is Greek yogurt with a little whole milk. If you want to make this dairy-free, leave out the yogurt and milk. Use an additional frozen banana and your non-dairy milk of choice! We also tossed in a few ice cubes to make it extra cold and refreshing.
Pineapple Beet Smoothie serves 3 or 4
1 cup Greek yogurt
1 frozen banana
1 cup grated beets
1 cup chopped pineapple
1/2 cup whole milk
a few ice cubes (optional)
Layer ingredients in blender in the order listed. Pulse together until combined, adding more milk if necessary. Blend on high until smooth and creamy.
