I know this sounds like an unlikely cast of characters, but trust me. Feta and watermelon are a perfect match, the sweetness of the melon is vibrant when paired with the salty cheese. There are a lot of variations of this salad out there, so feel free to use any herb if you have on hand. Basil or mint would be a great substitute. When the hot peppers are ready (soon!) add minced to serrano if you like it spicy. I could not stop eating this after making it, and the most work you have is chopping the melon.
First, a tip for cutting watermelon. I just happened to catch this “Mad Genius” tip last week, perfect timing! I hate getting watermelon juice all over my kitchen, and also that the watermelon seems the touch every surface before getting into the bowl. Here’s the perfect solution, cut parallel lines on either side of the wedge of watermelon, then slice through them crosswise. Now use a spoon to scoop the squares right into the bowl! Once the watermelon is diced, crumble the feta right into the bowl, and add the cilantro and lime juice. Texture wise I crumbled the feta really small so it would coat the big sweet cubes of watermelon. The results? No leftovers! Enjoy this salad right away for best results.
Watermelon & Feta Salad with Cilantro
6 cups cubed watermelon
8 oz feta cheese, crumbled
1/2 cup finely chopped cilantro
juice from 1 lime
Combine ingredients in a big bowl. Serve at once!
