Rutabaga is a hearty root vegetable closely related to a turnip, and is often confused with one. Rutabaga is sometimes called “yellow turnip”. Rutabagas can be used interchangeably with turnips and in many potato recipes. They have a rich yellow color and slightly sweet flavor. Rutabagas store for months in cold storage and are a winter staple.

Store unwashed rutabagas in a plastic bag in the refrigerator for up to a month.

Rutabaga can be eaten peeled or unpeeled, but for creamy texture and preparations remove the peel. Scrub the root of excess dirt before peeling. Slice and dice into whatever shape your recipe calls for. Rutabaga most often enjoyed roasted, mashed, or in a gratin.
