Mashed Rutabaga with Yogurt & Sage

If you’ve never tried rutabaga before mashed or smashed is a good way to start. Use your favorite mashed potato recipe and sub rutabaga for potato or try this herby version. Another great way to incorporate rutabaga into a meal is to use half potatoes and half rutabaga in a mashed dish. Peel one large or 2 smaller rutabaga to get started.

Mashed Rutabaga with Yogurt & Sage

This dish is really easy, just boil the rutabaga, drain, and mash with yogurt and sage. Season with salt and pepper. Serve with your favorite stew or protein like chicken, pork roast, etc.

Mashed Rutabaga with Yogurt & Sage

Mashed Rutabaga with Yogurt & Sage serves 4 as a side dish

1 large or two small rutabaga, peeled and roughly chopped
1/4 cup greek yogurt
2 tablespoons or more chopped sage
2 tablespoons butter
salt and pepper

Place the rutabaga in a large pot. Fill with water and add about a tablespoon of salt. Bring water to a boil, and then boil for 15 minutes or until rutabaga is soft enough to smash with the back of a spoon. Drain rutabaga, and return to the pot. Place over medium heat for a minute or two, stirring until the excess water is evaporated. Mash rutabaga, yogurt, and butter together. Season with sage, salt, and pepper. Serve warm.
