Cinco de Mayo comes early in May when we’re just transplanting our peppers, tomatoes, and other fiesta-friendly veggies! Hit up your local farmers’ market this weekend and see what storage crops you can find for these recipes. You’re more than likely to find cabbage, root vegetables, onions and more. Don’t be afraid to swap out a spring onion for a yellow onion or a different herb for cilantro. I picked up some ramps last weekend which would make a great addition to any taco, slaw, or burrito bowl. Get some friends together with a table of fresh veggies, local meats, and tortillas. Spring has finally sprung in the Northeast and summer is not far away!
