Most members join our CSA anticipating all of the great dinners they’ll make, but have you thought about utilizing your CSA share at the breakfast table? One of my favorite ways to use up leftover CSA veggies is to fold them into a frittata with farm-fresh eggs. If you have extra time make a batch of scones and they’ll be ready to go for mornings. During cooler months dice up a mix of root vegetables, winter squash, radishes, and onions for a filling breakfast hash. Add chunks of local sausage or serve thick-cut bacon on the side.
