I love our fresh cabbages! Cabbage stores well, and still tastes really sweet and mild even after keeping it in the refrigerator for a while. If you want to tackle the rest of your CSA first, just put the cabbage in a plastic bag in the vegetable drawer of your refrigerator. You’ll be surprised how long it lasts! This slaw is actually a pretty simple dish, with crumbled blue cheese added. Feel free to add other ingredients to the shredded cabbage based on your CSA Share contents. Just reduce the cabbage, so that you have 8 cups total shredded vegetables. Carrots, onions, kohlrabi, and even turnips would be nice additions. I kept it simple but there are a lot of variations you can make. If you don’t like blue cheese, try feta, goat, or just omit the cheese. The dressing and cabbage by themselves make a simple creamy slaw.
You probably have everything in your kitchen that you need to prepare our CSA vegetables. But, if you are looking to expand your kitchen tools I recommend a salad spinner and a large food processor . During the main CSA season the food processor in the farm kitchen is indispensable! We use it for making pestos, grating vegetables for fritters, mixing dressings, and more. Recently, I was at a friend’s for dinner and they pulled out the food processor to grate cabbage for slaw. I couldn’t believe I’d never tried it! I used the slicing dish to cut thin slices, but you could also use the grating disk. I think the results would be similar. I had a nice uniform slaw in minutes. Place the grated cabbage in a large bowl to toss with the dressing.
Crumble the cheese into the slaw, if you like pepper (I do) grind a bunch of fresh pepper into the slaw. Taste and add salt or more lemon if necessary. Serve with grilled meats, burgers, or veggie burgers. Perfect for summer salads and picnics!
Blue Cheese Cole Slaw
8 cups green or red cabbage, shredded
1 cup mayonnaise
2 teaspoons dijon mustard
1 tablespoon lemon juice
1/2 teaspoon salt
fresh ground pepper
4 oz crumbled blue cheese
Place grated cabbage in a large bowl. Stir together mayonnaise, mustard, lemon juice, salt, and pepper. Toss with cabbage. Add crumbled blue cheese. Taste slaw and adjust seasoning with salt, pepper, and lemon juice if necessary.
