Watermelon Radish Tea Sandwich

This is a fun recipe that’s easy to put together,  kids might even like to help assemble the sandwiches.  I have to admit that before this I had probably never had a radish sandwich.  If you’re a CSA member, you’ve probably noticed that we grow a lot of different types of radishes!  I love trying the different varieties, and I kept coming across radish and butter combos in my recipe searches.  Watermelon radishes are so gorgeous I subbed them in this traditional preparation.

The butter is paired here with lemon zest and juice, fresh thyme and marjoram.  I think you could try whatever fresh herbs you have on hand, and of course chives if you have them.  I had unsalted butter, so I used a pinch of salt, but if you use salted butter the extra salt is probably not necessary.  For the bread, I recommend you use your favorited sandwich bread.  I like whole grain, and thinly sliced rye is traditional. Let the butter get really soft and this comes together quick!

Watermelon Radish Tea Sandwiches

to serve four:
8 slices of toasted bread, crusts removed
2 small watermelon radishes sliced as thin as possible
4 tablespoons butter
1 tablespoon chopped fresh herbs such as thyme and marjoram or chives
1 teaspoon lemon zest
1/2 teaspoon lemon juice
salt if necessary

Prepare bread and radishes.

Mix together remaining ingredients.

Spread 1/2 tablespoon butter over each slice of bread.  Layer radishes on four slices of bread and top with remaining bread slices.

Serve at once.
