Here’s another super simple, and beautiful preparation for watermelon radishes. Once you slice into one of these you’ll see that just a simple drizzle of dressing is all you really need. These are pictured with thinly sliced kohlrabi, so if you have some left in your Winter CSA Share Box it’s a great addition.
Carpaccio is traditionally a preparation for meat or fish, but vegetables are great with this application. The capers are a nice contrast. Drizzle these with a simple mustard vinaigrette and serve as a first course or side dish.
Watermelon Radish Carpaccio serves 4
2 large watermelon radishes or equivalent small radishes sliced as thin as possible
4 tablespoons capers
Mustard vinaigrette (recipe follows, double if you like a lot of dressing)
Arrange slices of watermelon radish on a large serving plate or individual plates. Top with dressing and capers, serve.
Mustard Vinaigrette
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tsp dijon mustard
1 minced garlic clove
pinch of salt and pepper
squeeze of fresh lemon
Place all ingredients in a jar with a tight fitting lid and shake until combined.
