Spring onions are actually onions that are harvested earlier than the larger mature versions, with their green tops attached. Spring onions look like a scallion, but with a small onion at the bottom. Spring onions show up early in our CSA, usually during June and early July. Their tops are spicier than scallions, but milder than an onion. They pair well with eggs, greens, Asian & Mexican Cuisine, and salads. They also lend themselves well to grilling. The onions store longer than the greens, so remove the greens and use them first for best results.


Storage

Store in a plastic bag in the vegetable crisper of the refrigerator. For longer storage, separate the greens from bulbs. Use the greens within a day or two, and the bulbs within the week.


Preparation

Use the white bulbs as you would any onion. Thinly slice the green tops for garnish, salads, cooking, and any recipe that calls for scallions.
