Napa Cabbage is a mild-tasting Chinese cabbage that differs from a more common red or green cabbage in it’s elongated shape, ruffled leaves, and wide white stems. Napa Cabbage is high in Vitamins A and C, as wells as potassium and calcium. Napa cabbage is great raw, in Asian slaws and commonly used in kimchi, an Asian fermented dish. Often people who think they don’t like cabbage have had it overcooked, so raw Napa cabbage would be a great alternative for someone who thinks they don’t like cabbage.
Storage
Napa cabbage will store in the refrigerator for weeks.
Preparation
Remove outer leaves, rinse, then slice in half. Remove triangle shaped core. Shred for slaws and salads, or use larger leaves for stuffed cabbage dishes. Cut in larger pieces for stir-fries and sautés.
