2 cups cold water
1 cup cucumber, coarsely chopped
¼ cup sugar
Juice from 2 large limes
A dozen mint leaves
¾ cup rum
1 cup sparkling water – chilled
4 mint sprigs, cucumber slices, and lime wedges
In a blender process chopped cucumber and cold water until smooth. Strain mixture through a sieve and discard solids
For each Mojito: In a 2 cup glass measure combine 1 tablespoon of the sugar, 1 tablespoon of the lime juice, and 4 mint leaves; crush with a wooden spoon. Add 3 tablespoons of the rum and ½ cup of the cucumber mixture; stir until the sugar dissolves. Stir in ¼ cup of the sparkling water and pour over ¼ cup of ice.
Makes 4 Mojitos.
