Arugula by Early Morning Farm CSA

Arugula is a peppery green that adds a spicy bite to salads, pizzas, and raw dishes.  Also known as rocket, arugula is mild when cooked.  Arugula is an early summer crop, and a member of the brassica family; like kale, cabbage, cauliflower, and mustard greens.  Arugula is a great source of vitamins and minerals including vitamins A, C,  and K and iron.


Storage

Keep arugula in a plastic bag in the refrigerator’s vegetable bin for up to a week.


Preparation

Rinse leaves thoroughly to remove any remaining dirt.  Use our easy method for washing greens.  Chop or tear into bite size pieces. Add leaves to salads, sandwiches, grain dishes, pasta, and soups.  Use as a pizza topping or add to pesto.
