Purple Kohlrabi

We can see how when you open your CSA box and find Kohlrabi for the first time the reaction could be “Did this come from outer space!?”.  Kohlrabi does indeed look like an alien creature from another world, but it’s also quite delicious and very versatile   Kohlrabi is in the same family as Cabbage, Broccoli, Kale, etc. so expect the same flavors to compliment kohlrabi as you would the other cole crop vegetables.

Here’s five easy ways to use Kohlrabi:

1.) Eat it Raw! Just peel your kohlrabi with a vegetable peeler and slice into thin sticks.  A great crunchy snack and kids love it!

2.) In a Salad.  Kohlrabi adds a great crunch to any salad and an interesting new flavor.  Here’s a recipe our recipe for a Springtime Tabouli Salad with Kohlrabi. 

3.) In a Soup. Cut into small cubes, kohlrabi take about the same time as broccoli to cook. It makes a great addition to soups, try our White Beans and Escarole Soup with Kohlrabi recipe.

4.) Fritters! A classic eastern European use.  Here’s a recipe one of our CSA members passed on to us last year.

5.) Added to Stir Fries. Peel, cut in cubes, throw it in the stir fry pan with Bok Choi, Napa Cabbage, Carrots… the sky’s the limit!
