The most exciting news we have this week is we’ve been busy harvesting our tomatoes from the high tunnels! We’re looking forward to a nice variety of heirloom tomatoes, some our trellised tomatoes are as high as the ceiling! We’ll have more tomatoes in the coming weeks. In addition to tomatoes, the crew has been harvesting more summer squash, eggplant, and bell peppers from our high tunnels. They all go nicely together! The shares have had a variety of eggplant, most boxes get one Japanese and one Italian eggplant. They really work interchangeably in recipes, and this week includes an easy grilled recipe with fresh mozzarella. It’s a change up from the Asian inspired dishes, and a really great vegetarian dish that meat eaters will also love. Try adding some basil under the mozzarella cheese or sprinkled on top. The bunches of basil in the week 9 share are a little smaller than the huge bouquets we’ve had. This is a nice amount for using as garnish or you can try this Basil Dressing we tested in the farm kitchen. It’s great on salads, grilled chicken, tomatoes, and more. The meal plan this week has a lot of options, and we’re including an extra recipe for pickled beets in addition to the 5 weekly recipes.

Heirloom Tomatoes in the CSA Share
Prep Tips
Planning ahead can make meals easy during the week. If you have time grab kitchen partner and do a little chopping ahead of time. During the week pull out your prepped items and our recipes are even easier. This week’s share includes a lot of meals like salads that are best prepped just before eating, but there are still a few things that can be done ahead for easing prep time.
Salad. Make the dressing in advance. The lettuce can be washed and torn into bite-sized pieces a day or two in advance. Wrap a paper towel over the top to soak up any excess moisture.
Garlic Kale Pasta. Wash and chop the kale up to 3 days in advance.
Summer Squash Tian. Make the breadcrumbs in advance. If you have extra bread, make a large batch and store the leftovers in the freezer.
