Week 3: June 24th – June 28th
Basic Share Box: Kohlrabi, Lettuce, Hakurei Turnips, Celeriac, Parsnips, Kale, Escarole, Radicchio, Scallions, Napa Cabbage, Escarole
Radicchio is in the share boxes this week. A purple colored chicory leaf, radicchio tastes slightly bitter and spicy. Grill or lightly cook radicchio to mellow the flavor. This week’s share also includes the first basil of the season! Fresh basil should be used within a few days. Store fresh basil in a stems down in a glass of water like fresh flowers. Keep the glass out of the refrigerator at room temperature. This week’s meal plan also has some great salads – perfect for summer. This week’s share includes lettuce and escarole. For the lettuce check out this primer on making your own salad dressings. Escarole is leafy green that looks likes lettuce, but tastes a little bitter raw, it is best when lightly cooked. Escarole is light green in color, the green gets paler and white towards the bottom of the leaves and on the inner leaves.
