Happy week after Thanksgiving! Hopefully your Thanksgiving Share Box enhanced your meal! The best part is there’s probably so much leftover! Here are this week’s suggested recipes and prep tips. The vegetables packed in your share box are designed to store well, if you haven’t already separate the root vegetables, greens, and squash. The Brussels sprouts, leeks, and kale should be used pretty soon if you still have them. The root vegetables should stay in the bag they came in, and the onions will store well on the counter or in the refrigerator unwrapped. The winter squash stores well at 55 – 60F, or you can keep them on the counter if you’re using them soon. This week’s meal plan includes recipes for cabbage, radishes, leeks, and acorn squash. Next week we’ll send out some ideas for root vegetables, squash, turnips and butternut. Enjoy!
