Week 10: August 12th – August 16th
Premium Share Box: Lettuce, Summer Squash, Tomatoes, Bell Peppers, Swiss Chard, Hot Peppers, Carrots, Eggplant, Cabbage, Onion
This week’s share includes more tomatoes! We started off with a smaller amount in the boxes, but this week there will be a larger portion and two of our big green bell peppers (a great pairing!). Summer is rolling right along and we’re starting to see some awesome crops in the field. Carrots are back, and the first hot peppers are going into the CSA Shares. We typically include a small amount of hot peppers when we have them, if you don’t like spicy you can pass them on to a friend! We’re switching from Kale to Swiss Chard this week. You can cook the chard similarly to kale or any other leafy green. I recently heard the texture of Swiss Chard compared to Spinach, so I tried adding some leaves to a salad mixed with lettuce. It was great and everyone really enjoyed it! If you have leftover stems, try grilling them!

Prep Tips
Planning ahead can make meals easy during the week. If you have time grab kitchen partner and do a little chopping ahead of time. During the week pull out your prepped items and our recipes are even easier. This week’s share includes a lot of meals like salads that are best prepped just before eating, but there are still a few things that can be done ahead for easing prep time.
Salad. The lettuce can be washed and torn into bite-sized pieces a day or two in advance. Wrap a paper towel over the top to soak up any excess moisture. Black beans or Ground Beef can be made up to 3days in advance. Warm up or serve chilled with the salad.
Carrot Fritters. Grate the carrots a day or two in advance and this is a quick weeknight meal.
Orzo. Cook the orzo up to 3 days in advance.
