Cucumbers are a member of the melon and squash family, harvested young like summer squash. On the farm we mainly grow slicing cucumbers which are delicious raw, and also make great refrigerator pickles. Cucumbers can be eaten peeled or unpeeled, and the fresh cucumbers we grow on the farm are not waxed like those found in a supermarket.
Storage
Stored in a plastic bag in the refrigerator, cucumbers should last up to a week.
Preparation
Rinse thoroughly, and pat dry. Enjoy raw with or without the peel. Cucumbers are usually eaten raw, but can be given a quick sauté for something different. Also enjoy pickled, in salads, juiced, or fermented.
