CSA Inspired Bean Burgers

One great thing about joining a CSA, is trying new things every week! It’s important to use recipes that are flexible based on what’s in season and what comes in your CSA Share each week. These bean burgers are easy and customizable. Use whatever grated root vegetable comes in your box, like carrot, parsnip, celeriac, or beets with your favorite bean. Add spices based on your meal. Here I used chickpea and cumin; black beans, cumin, and coriander would make a great combination as well as white bean with basil. Add fresh herbs if you have them. After you grate the root vegetable, gently pulse everything in a food processor. The mixture should be chunky, and hold together easily.

This recipe is gluten free, just be sure to buy gluten free certified oats if necessary. While oats may not contain gluten, they are often processed with gluten. The burgers are dredged in flour before pan frying, so you can blend oats in the food processor until to make oat flour, or use regular or gluten free flour.

When the mixture is pulsed place about one quarter cup of flour on a plate. Shape patties, and gently press each side in the flour. Heat cast iron pan or griddle over medium heat. Cook burgers in a thin layer of canola oil 2 – 3 minutes per side.

Serve burgers with sauce on top or on the side for dipping. Try basil pesto, mayonnaise mixed with lemon and garlic, or just grainy mustard.

CSA Inspired Bean Burgers

2 cloves garlic
1 cup shredded root vegetable (carrot, parsnip, celeriac, or beet)
2 1 /2 cups cooked or canned beans of your choice
1 egg
1/2 cup quick cooking oats plus more for oat flour if necessary
2 tablespoons olive oil
1 teaspoon salt
few grinds of fresh pepper
1 teaspoon dry spice like cumin
Optional: 2 teaspoons minced fresh herbs

Mince garlic. Place garlic in food processor and process until mixed. Add remaining ingredients and pulse or mix on low until mixture is chunky and holds together.

Shape mixture into 6 burgers. Place 1/4 cup flour on a plate. Gently press both sides of the burger into the flour. Pan fry in canola oil over medium heat in cast iron pan or griddle. Serve with your favorite sauce or condiment.
