Creamy Avocado Salad Dressing

Pick up an avocado on your way home and you might have everything on hand to make this creamy and slightly spicy dressing. It’s kind of hard to resist putting it on everything – in addition to salads it makes a great dip for raw veggies. Toss grilled vegetables and/or pasta in it, use it in place of aioli, spread onto sandwiches, you get the picture. I just put together a simple salad of cucumber, lettuce, and onion. Depending on the time of the CSA season, customize this salad to your share box. Try crunchy kohlrabi, grated, carrots, spring onions, herbs, beets, anything! Top with nuts or seeds. To make this salad into a more filling meal try adding grilled chicken, hardboiled eggs, or chickpeas. Serve with fresh bread.

Pureeing the ingredients in a blender or food processor makes this really easy. You’ll end up with about a cup of dressing, the vinegar helps it keep until the next day, so you might try a salad one night and something else the next. Let us know what you come up with!

Creamy Avocado Salad Dressing

1/2 cup greek yogurt or sour cream
1 ripe avocado
1/3 cup olive oil
1 tablespoon apple cider vinegar
2 – 3 shakes of tabasco sauce
1 small garlic clove, minced
1/4 tsp ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper

Combine dressing ingredients in a blender or food processor. Blend until smooth.

Toss lettuce in the dressing and top with your favorite toppings. For inspiration check out our salad post here.
