Strawberries! We’re thrilled our strawberry patch made it through the rain and we’re able to include them in the boxes this week. This week’s meal plan also has some great salads – perfect for the warmer weather we’ve been having. This week’s share includes lettuce and escarole. For the lettuce check out this primer on making your own salad dressings. Escarole is leafy green that looks likes lettuce, but tastes a little bitter raw, it is best when lightly cooked. Escarole is light green in color, the green gets paler and white towards the bottom of the leaves and on the inner leaves.

White Bean, Kohlrabi, & Escarole Soup
Kale Pesto Salmon serve with simple salad
Parsnip Hummus – serve with pita, cheese, olives, & grilled chicken
Pickled Hakurei Turnips – with salad and local grass-fed burgers
Celeriac Remoulade over lettuce – serve with your favorite protein off the grill
